I’ve often thought that Byron and surrounds offer the perfect climate to eat and grow Asian flavours, so I am always thrilled to see more and more Asian-inspired eateries popping up around Byron Shire.
Bay Pho is your very own tasty little flavour-trip to Vietnam, minus the airports and long passport control lines. Located in the old Woolies carpark, this Vietnamese eatery is tucked away from the main drag, but I think this actually works in their favour, as you can escape the crowds (if only for a little while) and immerse yourself in a flavourful Pho, and dream of heading back to Hoi An some day…
On my most recent visit I was aching for a soul-soothing broth-based soup, so naturally I went for Pho with beef. The broth came out piping hot and had just the right amount of aromatic yummy beefy-flavoured oil sitting happily on the top. So of course, I quickly slide the side dish of bean sprouts and Vietnamese mint, along with a squeeze of lime, straight into my bowl of silky noodle yumminess, and dived on in with my chopsticks, happily slurping away, without a care in the world!
If you are looking to spice up your Pho-game a little bit more, you’re in luck because the crew at Bay Pho also have some pimped up chilli sauces on the side, to make it easy for you to dial up the spice-volume. The naughty, glutinous big kid inside me was also screaming out for pork spring rolls – so, I listened to the child within, and ordered three, and devoured them between noodle slurps and nourishing beef broth goodness.
Bay Pho is open Monday to Saturday for lunch and dinner. Grab your friends, or dine solo, and allow your mind to whisk you away to Vietnam via your taste buds.
