
Highwayman’s Dan Woolley has been working with whisky for over 20 years, and started to fill his own barrels here in Byron Bay over ten years ago.
He launched the brand in 2020, and the year after that he started the Winter Whisky Feast – now in its fifth year, bigger and better than ever!
The Winter Whisky Feast is a celebration of all things whisky and food – with this year seeing four sessions (one every two hours and each with 30 guests) starting at 12.30pm.
This epic event sells out every year with very good reason! You get a cocktail on arrival followed by a full in-depth tour through production, and a seated masterclass running through six whiskies – including two that have come straight from the barrel!
After that comes the feast of three meats and three sides, all put together by Alex Clark of ‘Boozyfoodies’ and a dessert by Baker & Daughters of Mullumbimby! Barrel-aged cocktails, barrel-aged hot sauce and barrel-aged whiskies – who could ask for more?
There’s a great pop-up shop set up for this ‘not to be missed’ day but get in quick as tickets are selling fast and please remember, don’t feed Louis the Bluey – he’s on a diet!
